The prickly pear cactus--a plant that has the distinction of being a vegetable, fruit, and flower all in one--is destined to be the next big herbal superstar, following in the footsteps of St. John's wart and Echinacea, according to author Ran Knishinsky. One of the driving forces behind its popularity is that each part of this plant functions as both food and medicine. It has been a staple in the diets of the people of the southwestern portion of the United States, the Middle East, parts of Europe and Africa, and Central and South America for hundreds of years. Traditionally, the prickly pear cactus has been used as a panacea for over 100 different ailments. More recently, it was recognized by the International Diabetes Center as one of five herbals with the greatest promise for the alternative treatment of diabetes and has been the subject of blood cholesterol research trials sponsored by the American Heart Association. In addition to the results of this research, Knishinsky includes scientific studies on the antiviral properties of the cactus to treat herpes, influenza, and HIV, as well as its use in treating obesity, gastrointestinal disorders, and skin ailments. A resource section details the natural food companies that supply prickly pear cactus and a chapter of recipes offers 24 traditional and modern dishes using the pads and fruit of the cactus.

Andrew Weil, M.D. said

Prickly pear (called nopal in Spanish) is a cactus (Opuntia spp) native to Mexico that grows in parts of the United States and in some Mediterranean regions. I've long recommended prickly pear extract as a supplement to help control blood sugar levels among diabetics.

Hangover Helper

Prickly Pear extract can prevent the worst of hangovers, according to a research study reported in the June 2004 issue of "Archives of Internal Medicine."Dr Jeffery Weise and colleagues at Tulane University in New Orleans conducted the research. They found that prickly pear extract significantly reduces the symptoms of alcohol-induced hangovers, if extract was taken a few hours before drinking alcohol.

prickly pear cactus -- has shown the most promise. Researchers found it reduces three of nine hangover symptoms: nausea, dry mouth, and loss of appetite. It’s believed to work by reducing the body’s inflammatory response that alcohol causes.

Mesquite
Medical studies of mesquite and other desert foods show that despite its sweetness, mesquite flour is extremely effective in controlling blood sugar levels in people with diabetes. The sweetness comes from fructose, which the body can process without insulin. In addition, soluble fibers, such as galactomannin gum in the seeds and pods slow absorption of nutrients, resulting in a flattened blood sugar curve, unlike the peaks that follow consumption of wheat flour, corn meal and other common staples.

The sweet pods are a good source of calcium, manganese, iron and zinc.
The seeds within are 40% protein. The gel-forming fiber allows foods to be
slowly digested and absorbed over a 4 to 6 hour period, rather than 1 or 2
hours, which produces a rapid rise in blood sugar.
